Recipe Ideas: Sexy Spicy Smoked Fish Kedgeree


This recipe really hits the sport if you are an avid fan of smoked fish with a hint of spice. Taking next to no time to prep, this recipe is a perfect light ‘n’ healthy option if you want to cook a romantic dinner date.

Serves 2 – 15-20 mins

Ingredients

  • Smoked mackerel 500 grams (choose a leaner fish e.g. cod to lower calorie content)

  • 2 tbsp butter or ghee (a light frying alternative is fine)

  • 2 leeks

  • 2 red chillis

  • 2 sticks of celery

  • 1 tbsp ginger

  • 2 tbsp hot curry powder

  • 150 grams yoghurt

  • 2 cups cooked rice (optional)

  • Salt and pepper to taste

Directions

  1. Put the fish in a large. Pour cold water over the fish and ensure the fish is completely submerged in the water. Place on a high heat until the water starts to boil.

  2. Remove the fish (be wary as it will start to fall apart). Use a fork or utensil to flake the fish and separate into small pieces.

  3. Melt the butter/ghee into a large pan. Finely dice the leeks, chillis and celery and stick in the pan. Stir through for 2 minutes

  4. Add the ginger and curry powder and continue to stir.

  5. You now have the option of adding cooked rice into the pan. Stir will. Skip this step if you want to keep the dish low in calories.

  6. Return the fish to the pan, add in the yoghurt and stir through.

  7. Season with salt and pepper.

  8. Serve it.

  9. Eat it.
