Recipe Ideas: Nutrient Packed Pizza
Ever wonder how to make pizza tasty AND nutritious at the same time? Wonder no more! This egg based pizza can serve as a great alternative for breakfast, or perhaps a decent dish for midday or dinner.
1 tablespoon pork lard or coconut oil
1 red pepper
150 grams cherry tomatoes
5-10 olives (green or black depending on preference)
50 grams of ham (optional if dieting)
Salt and pepper
Add a tablespoon of your preferred cooking oil to a large saucepan and place on medium heat.
Cut the pepper and ham into small pieces. Cut the tomatoes in half. Add to pan and cook until ingredients have heated through. About 2-3 minutes. Then add in the olives.
Beat 6 eggs in a bowl. If you want to be conscious of calories, go for 5 egg whites and a single yolk. Add pepper and a sprinkle of salt. Pour eggs over the ingredients in the pan and spread evenly.
Place pan under the grill (if you have a plastic handle be careful to keep this away and out from under the grill) and heat on full whack for 5-10 minutes until the pizza has cooked through.
Sprinkle rocket on top, or add as a side salad.
